Borys, a specialist in endocrinology, metabolic diseases, and nutrition, presents the holistic concept - involving physical activity, nutrition, and environmental interventions - that led him to launch Epode, a program designed to improve the quality and nutritional value of school dinners in France, where it has proven to be so successful it is now being exported to other countries.
