Fried Rice
(Hmong)
Heat 2 teaspoons of oil in wok and stir-fry 2
beaten eggs as you would scrambled eggs; set the eggs aside.
In the same wok, pour in 2 more tablespoons oil and fry 1 chopped
yellow onion and 3 cloves crushed garlic until golden brown.
Add 1 pound pork meat which has been chopped into cubes, ½ pound
small, cooked shrimp, 1 teaspoon salt, 1 teaspoon pepper, 2
tablespoons fish sauce and 2 tablespoons ketchup. Stir-fry for
5 minutes. Add the stir-fried eggs and 4 cups cooked rice. Stir
well for 2 minutes. On plate, arrange the fried rice and garnish
with ½ cup chopped green onion and 4 tablespoons fresh chopped
parsley.
